Nisin
Nisin is a polypeptide (34 residues) antibiotic structurally similar to subtilin but containing no tryptophan; a member of the lantibiotic family. Reduces the thermal resistance of bacterial spores in milk-based beverages.The C-terminus of nisin is responsible for the initial interaction of nisin, binding to the target membrane. Active against Gram-positive bacteria at the cytoplasmic membrane.
Antibiotic with bactericidal action. Binds to the lipid A portion of bacterial lipopolysaccharides. Induces pore formation in the membranes of cortex cells from excised sorghum roots. Mode of Action: Binds to and interferes with the permeability of the cytoplasmic membrane. Antimicrobial spectrum: Gram-negative and Gram-positive bacteria (requires chelator such as EDTA).
Soluble in dilute acids such as 0.02 N HCl (118 mg/mL). Any undissolved material is the dairy solids and should not be considered a problem. Stable to boiling in acid solutions.
